Tasting Notes
Pure exoticism… Aromas of banana, papaya, lychee, physalis, melon, kumquat, peach, pineapple, and elderflower. On the nose, a hint of damp slate. Very juicy, dense and concentrated with the typical Moselle minerality.
Food Pairing
The magnum bottle is ideal for special occasions. The Auslese, for example, pairs wonderfully with exquisite cheeses. Always a perfect partner for fruity desserts. Great with very spicy curry dishes.
Vinification and Aging
The grapes are hand-picked and carefully selected. In the tubs in the vineyard, they were then gently pressed to achieve a longer maceration time. Whole cluster pressing took place for approx. 14 hours. This wine was fermented without any added yeasts or enzymes in stainless steel tanks for approx. four months. For more complexity and stability, it was left on the fine lees for at least three to four months.
Growing Region and Climate
On the banks of the Moselle before the town of Bernkastel lies the prime site of Bernkasteler Lay. Within its heart, on finely weathered slate soil, very old vines for this Auslese grow over eight hectares. The vineyards face west to southwest, with a gentle slope from 115 to 135 meters above sea level. This special orientation of the site guarantees good sun exposure almost all day long, which is crucial for the later aromatic profile of the grapes.
