Tasting Notes
Even with the lightly perfectly ripened Crémant, the slate minerality is clearly discernible on the fine Burgundian nose, which reveals itself full of fresh citrus fruit underlaid with highly delicate brioche aromas. Sparkling foam on the palate counters the dosage with puristic freshness.
Food Pairing
A wonderful uncomplicated, yet sophisticated Crémant that is well-received on all occasions, be it with light dishes such as salmon, risottos or salads. The perfect glass for a pleasant conversation with friends or to end the day comfortably.
Vinification and Aging
The grapes were selectively harvested and crushed in baskets in the vineyard to achieve a longer maceration time. The whole bunch pressing took place for approx. 16 hours. The base wine was fermented in stainless steel tanks for several months without any added yeasts or enzymes, before being "sparkled". There, the base wine was aged on lees for over 2 years according to traditional methods and is now partially riddled before being released for sale.
Growing Region and Climate
Winegrowing in the Moselle region is characterized by its unique landscape. The character of the growing regions is shaped by the special geological, topographical and microclimatic interplay. The grapes (Chardonnay/Pinot Blanc/Riesling) for this sparkling wine come from the vineyards of the Wwe. Dr. H. Thanisch Erben Müller-Burggraef winery. The Moselle climate is one of the warmest in Germany, and due to its proximity to the river, excellent conditions for viticulture are found here. The slate soils of the steep, sun-drenched slopes store heat and release it to the vines at night, largely preventing frost.
