Vinification and aging
The grapes were hand-picked and lightly crushed in buckets in the vineyard to achieve longer skin contact time. Whole cluster pressing took place for approximately 24 hours. The wine was fermented in stainless steel tanks, before its second fermentation occurred following the traditional method ("Flaschengärung"). After fermentation, the sparkling wine was left on the lees for several months before it was riddled.
Growing region and climate
Viticulture in the Mosel region is characterized by its unique landscape. The character of the growing areas is shaped by the special geological, topographical, and microclimatic interplay. The grapes for this wine were grown in the Lieser Niederberg-Helden vineyard. This vineyard is an excellent steep slope with deep, stony clay weathered soil, facing south-southwest.
