Tasting Notes
The wine is very concentrated, powerful and at the same time elegant and almost dominant. Aromas of overripe stone fruit, pineapple, orange zest, Boskoop apples, papaya, brioche, white truffle, dates and dried fruit. Delicate herbal notes, bergamot, eucalyptus lightly smoky, viscous and the expressive minerality and salinity typical of the Doctor, with a never-ending finish.
Food Pairing
The Magnum bottle is suitable for any kind of festivity and special occasion. Excellent with blue cheese or slightly salty and spicy hard cheese for dessert. A delight with foie gras.
Vinification and Aging
In the different sections of the Doctor vineyard, the grapes were hand-picked and carefully selected. They were then lightly crushed in tubs in the vineyard to achieve a longer maceration time. Whole cluster pressing took approximately 14 hours. This wine was fermented in stainless steel tanks for several months without any added yeasts or enzymes. For more complexity and stability, it was left on the lees for at least three to four months.
Growing Region and Climate
The world-famous 100% steep slope of Bernkasteler Doctor is located at 125 to 200 meters above sea level, facing south-southwest. It is characterized by stony, loamy, and slate-rich Devonian clay slate weathered soil. Due to the special orientation of the site, good sun exposure is guaranteed almost at all times of the day, which contributes to the later aromatic profile in the grapes. Additionally, the numerous slate-covered roofs of Bernkastel below the vineyard radiate warmth into the steep slope, which also benefits the ripening process.
