Tasting Notes
Extremely concentrated and balanced. The original primary aromas of star fruit, pineapple, orange zest, boscop, papaya, elderflower now recede into the background, allowing the secondary- and tertiaryaromas to fully emerge. Now, notes of sweet yeast bread, black truffles as well as a delicate yet profound herbal note, underpinned by subtle woody notes, slightly smoky as well as a hint of petrol, viscous and the typical, expressive slatemineralogy of the Doctor as saltiness come to the forefront
Food Recommendation
Wonderful with fish and seafood, for example "Gravad Lax." Also excellent with all spicy, and even hearty dishes. A sensational soloist but also an excellent partner for grilled dishes. This wine is "historic" and should be enjoyed with absolute calm and concentration. Due to the enormous structure that the wine brings, it easily masters all dishes and always surprises anew, as soon as you take the next sip.
Growing Region and Climate
The world-renowned 100% steep slope Berncasteler Doctor is located at 125 to 200 meters above sea level with a south-southwest orientation. It is characterized by stony, clayey, and slate-containing Devonian shale weathering soil. Due to the special orientation of the site, good sun exposure is guaranteed almost at all times of the day, which contributes to the later aroma profile in the grapes. Additionally, the numerous slate-covered roofs of Bernkastel below the vineyard reflect heat into the steep slope, which also benefits the ripening process.
Vinification and Aging
In the different areas of the Doctor vineyard, the grapes were hand-picked and carefully selected. In the tubs in the vineyard, they were then gently crushed to allow for a longer maceration period. Whole cluster pressing took place for approximately 14 hours. This wine was fermented without any added yeasts or enzymes, in large wooden barrels for several months. For more complexity and stability, it was left on the fine lees for at least three to four months.
