Tasting notes
A concentrated bouquet of dried apricots, honey, and botrytis combined with the typical slate notes of this site. The almost decadently rich and full flavor seems to linger on endlessly.
Food pairing
Foie gras in all variations, blue cheese, and very rich desserts.
Winemaking and ageing
In the different areas of the Doctor vineyard, the grapes were hand-picked and carefully selected. In the tubs in the vineyard, they were then crushed to achieve a longer maceration time. The whole bunch pressing took place for about 24 hours. This wine was fermented in stainless steel tanks for about four to six months without any added yeast or enzymes and then matured in traditional 1000-liter wooden barrels. For more complexity and stability, it was left on the fine lees for at least three to four months.
Growing region and climate
The world-famous 100% steep slope Berncasteler Doctor is located at 125 to 200 meters above sea level with a south-southwest orientation. It is characterized by a stony, loamy, and slatey Devonian clay slate weathered soil. Due to the special orientation of the site, good sun exposure is guaranteed almost at all times of the day, which determines the later aroma profile in the grapes. In addition, the numerous slate-covered roofs of Bernkastel below the vineyard radiate heat into the steep slope, which also benefits the ripening process.
