Tasting Notes
The wine is very concentrated, powerful, elegant and almost assertive. Aromas of overripe stone fruit, pineapple, orange zest, Boskoop apple, papaya, brioche, white truffle, dates, and dried fruit. Delicate herbal notes, bergamot, eucalyptus, slightly smoky, viscous and the characteristic, expressive minerality and saltiness typical of the Doctor, with a never-ending finish.
Food Pairing
Excellent with blue cheese or slightly salty and spicy hard cheese for dessert. A delight with foie gras.
Vinification and Aging
In the different areas of the Doctor vineyard, the grapes were hand-picked and carefully selected. They were then lightly crushed in tubs in the vineyard to allow for a longer maceration period. The whole bunch pressing took place over approximately 14 hours. This wine was fermented in stainless steel tanks for several months without any added yeasts or enzymes. For greater complexity and stability, it was left on the fine lees for at least three to four months.
Growing Region and Climate
The world-renowned 100% steep slope Berncasteler Doctor is located at an altitude of 125 to 200 meters above sea level, facing south-southwest. It is characterized by stony, loamy, and slate-rich Devon slate weathered soil. Due to the special orientation of the site, good sun exposure is guaranteed almost at any time of day, which contributes to the later aromatic profile of the grapes. Additionally, the numerous slate-covered roofs of Bernkastel below the vineyard radiate warmth into the steep slope, which also benefits the ripening process.
