Tasting notes
The wine is very concentrated, powerful yet elegant and almost dominant. Aromas of overripe stone fruit, pineapple, orange zest, Boskoop apple, papaya, brioche, white truffle, dates and dried fruit. Delicate herbal notes, bergamot, eucalyptus, slightly smoky, viscous and the expressive minerality and saltiness typical of the Doctor with an unending finish.
Food pairing recommendation
Excellent with blue cheese or slightly salty and spicy hard cheese for dessert. A delight with foie gras.
Vinification and aging
In the different sections of the Doctor vineyard, the grapes were hand-picked and carefully selected. They were then lightly pressed in vats in the vineyard to achieve a longer maceration time. Whole cluster pressing took place over approximately 14 hours. This wine was fermented in stainless steel tanks for several months without any added yeasts or enzymes. For more complexity and stability, it was left on the fine lees for at least three to four months.
Growing region and climate
The world-famous 100% steep slope of Berncasteler Doctor is located at 125 to 200 meters above sea level with a south-southwest orientation. It is characterized by a stony, loamy, and slate-rich Devonian clay slate weathered soil. Due to the special orientation of the site, good sun exposure is guaranteed almost at any time of day, which creates the later aromatic profile in the grapes. Additionally, the numerous slate-covered roofs of Bernkastel below the vineyard reflect heat back onto the steep slope, which also benefits the ripening process.
