Tasting notes
Clear, medium yellow. On the nose, the typical smoky character of Doctor wines, followed by intense slate spice. Aromas of elderflower, melissa, blood orange and fully ripe citrus fruits, brioche, truffle, and a subtly charming herbal note. The finest phenols, incredible power and expression with a rich structure. As with all "Doctor Wines", it finishes with a slightly salty finish.
Food pairing
Unbeatable with almost all seafood or sea fruits in general. Also sensational with all spicy dishes. Works perfectly as a food companion in many variations, but can also impress and shine as a soloist.
Processing and aging
In the different areas of the Doctor vineyard, the grapes were hand-picked and carefully selected. In the tubs in the vineyard, they were then pressed to ensure a longer maceration time. Whole cluster pressing took place for about 14 hours. This wine was fermented in stainless steel tanks for several months without any added yeasts or enzymes. For more complexity and stability, it was left on the fine lees for at least three to four months.
Growing area and climate
The world-famous 100% steep slope of Berncasteler Doctor is located at an altitude of 125 to 200 meters above sea level with a south-southwest orientation. It is characterized by a stony, loamy and slate-containing Devonian shale weathering soil. Due to the special orientation of the site, good sun exposure is guaranteed almost at all times of the day, which determines the later aroma play in the grapes. In addition, the numerous slate-covered roofs of Bernkastel below the vineyard radiate heat into the steep slope, which also benefits the ripening process.
