Tasting notes
Aromas of star fruit, mirabelle plum and elderflower, as well as juicy oranges. Full-bodied with a fine minerality, a delicate herbal note and the typical smokiness for the Doctor.
Food pairing
Especially good with fish and seafood. Easily masters spicy Asian dishes, also excellent with goat cheese.
Vinification and aging
In the different sections of the Doctor vineyard, the grapes were harvested by hand and carefully selected. They were then gently pressed in baskets in the vineyard to allow for a longer maceration period. Whole cluster pressing took place for approximately 24 hours. This wine was fermented without any added yeasts or enzymes in stainless steel tanks for several months. For more complexity and stability, it was left on its fine lees for at least three to four months.
Growing region and climate
The world-famous 100% steep slope Berncasteler Doctor is located at an altitude of 125 to 200 meters above sea level, facing south-southwest. It is characterized by a stony, loamy, and slate-rich weathered Devonian clay slate soil. Due to the particular orientation of the site, good sun exposure is guaranteed almost at any time of day, which contributes to the later aromatic profile in the grapes. Additionally, the numerous slate-covered roofs of Bernkastel below the vineyard radiate warmth into the steep slope, which also benefits the ripening process.
