Tasting Notes
A highly elegant, almost radiant wine. Fine herbal spice, fresh hay, flint, aromas of fully ripe apricot, grapefruit and honeydew melon, and a hint of fennel. This wine radiates perfect harmony with its elegant minerality, the tart oak note and invigorating acidity, which is subtly underscored by a delicate salinity towards the finish.
Food pairing
Pairs excellently with Asian cuisine, all varieties of sushi, and also with seafood and curries.
Region and Climate
The Bernkasteler Graben is located in the immediate vicinity of the famous Berncasteler Doctor vineyard. Ancient Riesling vines grow here on deep slate soils with a slope of almost 60%. This produces highly elegant, nuanced and fruit-driven wines that are particularly unforgettable in the off-dry range. The Mosel climate is one of the warmest in Germany, and the proximity to the river provides excellent conditions for viticulture. The slate soils of the steep, sun-drenched slopes store heat and release it to the vines at night, largely preventing frost.
Vinification and Aging
Rigorous selection in the vineyard and hand-picking were performed for this Spätlese. The grapes were lightly crushed in vats in the vineyard to allow for longer skin contact. Whole bunch pressing took place over approximately 24 hours. The wine was fermented for several months in Doppelstückfass (2400 liters) without any added yeasts or enzymes. It then rested on its fine lees for at least 3 months to gain more complexity and stability.
