Tasting Notes
The wine presents itself in a ruby red color. It shows aromas of sour cherries, cassis and mocha. Delicate roasted aromas and a good tannin structure.
Food Pairing
A great companion to game dishes and roasts. Also try the Scandinavian variant and serve it with steamed cod in a mustard sauce.
Processing and Aging
The fully ripe grapes were harvested by hand with 108° Oechsle in beautiful harvest weather, strictly selected and immediately brought to the cellar. There, the grapes were again selected and destemmed. Afterwards, they were cooled down to 8 degrees Celsius in a 1,500 liter vat, then remontage began. The cold maceration took place for 17 days until the cooling was removed and fermentation began. This lasted for 9 days. Afterwards, the wine was pressed and filled into new French barriques (medium toasted). Here it matured for 16 months until it was bottled unfiltered in spring 2016.
Growing Region and Climate
Viticulture in the Mosel region is characterized by its unique landscape. The character of the growing areas is shaped by the special geological, topographical, and microclimatic interplay. The grapes for this wine were grown in the Lieserer Niederberg Helden vineyard. This vineyard is an excellent steep slope with deep, stony clay-weathered soil, facing south-southwest.
